- 3 pounds Yukon gold potatoes (chopped into 1/2-inch pieces)
- One small red onion (finely chopped)
- 1 1/2 cups of real mayonnaise
- 1/4 cup of dill pickles (chopped)
- 1 tablespoon of Dijon mustard
- 1/4 cup fresh chives (finely chopped)
- 1 tablespoon of fresh lemon juice
- 1/2 teaspoon paprika
- Four hard-boiled eggs (chopped)
- Kosher salt
- Freshly ground black pepper
In a large pot or Dutch oven, cover the potatoes with water. Then season them generously with salt. Bring the water to a boil. Cook the potatoes between 12 and 15 minutes or until you can easily pierce them with a fork. Afterward, drain the water, then set the potatoes aside to cool slightly.
Now, combine the mayonnaise, red onion, Dijon mustard, lemon juice, paprika, and pickles in a large bowl. Next, use a spatula or spoon to blend the ingredients. Then fold in the slightly cooled potatoes, the eggs, and chives. Finally, season the potato salad with salt and pepper.
You can serve the potato salad immediately after making it or refrigerate it first.
Grilled Green Beans
If you’ve never grilled green beans, you and your guests are in for an incredible treat. For this, start by putting a piece of heavy-duty foil on top of the barbecue grill grates. That way, you don’t need to worry about them falling through the openings.
In addition, you can double or triple the ingredients based on the number of people you plan to have over for Memorial Day.
- 1-pound fresh green beans (ends trimmed)
- 3 tablespoons extra-virgin oil
- 1 tablespoon of chili garlic paste
- 2 tablespoons soy sauce
- 2 teaspoons of honey
- Red pepper flakes (just a pinch)
- Kosher salt
- Sesame seeds (for garnish)
- Roasted peanuts (chopped – for garnish)
- Green onions (sliced thin – for garnish)
For this delicious side dish, prepare the grill, as mentioned. Afterward, turn the heat to medium-high.
Whisk the extra-virgin olive oil, chili garlic paste, soy sauce, honey, and red pepper flakes in a large skillet. When finished, add a pound of green beans. Next, toss to coat them evenly, then add salt to taste.
Now, you’ll place the green beans on a grill pan or directly on top of the foil. Then cook them for about seven minutes or until they’re charred.
When done, remove the green beans and garnish them with sesame seeds, roasted peanuts, and green onion.
